There’s an exciting new addition to Inver Grove Heights’ vibrant local dining scene: Inver Grove Brewing Co., a brew pub from the team behind Lakeville Brewing Company.  We spoke with Megan and Don Seiler—who own and operate the business with Glen and Kate Bruestle and Head Brewer Taylor Quill—to learn what’s on tap at Inver Grove Brewing and what’s brewing for the future.

As a brew pub, Inver Grove Brewing’s 20 taps will feature craft beers produced on-site, as well as beers from other small breweries. 

“If all goes well, we’ll be serving beer made in Inver Grove by the end of November,” says Don.  “That’s a pretty tight schedule, but certainly by the end of the year, we’ll have beers on tap brewed at our brewery.”

“Different beers will be ready at different times, depending on the brew schedule,” explains Megan.  “Our flagship beers will probably remain the same as at Lakeville: cream ale, light lager, Irish red, IPA, milk stout.  We’ll also have a hazy IPA and likely a sour.  With the size of equipment we have, we can do interesting things, like splitting batch of cream ale and flavoring each one differently.  We can have variation within the same style of beer.”

In the meantime, Inver Grove Brewing is offering a rotating selection guest taps, as well as a full bar.  The specialty cocktail list features craft spirits from local and regional distilleries, including Tattersall Distilling and Duluth’s Vikre Distillery.  On the non-alcoholic side, there’s kombucha on tap, Pepsi products, and possibly craft sodas in the future.

Inver Grove Brewing boasts a full food menu, with appetizers like wings, nachos, and fries plus entrees including salads, burgers, sandwiches, tacos, and pasta.  There’s also a lineup of Neapolitan-style brick oven pizzas, ranging from classic pepperoni to a coconut curry pie topped with roasted sweet potatoes.  Vegetarians will appreciate the range of options (in addition to vegetarian pizzas, there’s a black bean burger, hummus platter, and fire roasted cauliflower “wings”).  Gluten-free buns for sandwiches and burgers are available upon request. 

“Glen is our head chef and co-owner,” says Megan.  “He likes to take your everyday things and put a spin on them—one of our most popular items is the Reuben nachos.  Our menu isn’t your standard bar food, it’s a little more interesting than that.”

In addition to the lunch and dinner menu, brunch is served on Saturday and Sunday until 1:00 p.m.  There are also frequent food specials, often with a creative culinary twist (check out Inver Grove Brewing’s Facebook page for details).

Inver Grove Brewing prides itself on its family-friendly atmosphere, with a kids menu, high chairs, and family-friendly card games.  From a child’s perspective, that kid’s menu includes a very important bonus: each meal comes with soft serve and a homemade cookie.

There are plenty of specials at Inver Grove Brewing for grownups, too.  Happy hour runs from 3:00 p.m. to 6:00 p.m. Monday through Friday and all day Sunday, with food and drink specials.  There’s live music on Thursdays from 6:00 p.m. to 9:00 p.m. and televisions to screen sporting events.

Inver Grove Brewing is also a great place to celebrate: stop by on the Tuesday of your birthday week for a free Inver Grove Brewing gift with the purchase of an entree.

Besides getting the brewery up and running, future developments at Inver Grove Brewing include a patio with a bar and firepits that is scheduled to open this spring or summer.

“We’ve been received very well, we feel lucky people have come out and supported us,” says Megan.  “We’re looking forward to continuing to get involved with the community and supporting local events and charities.”

“We were opening at the same time as Inver Grove Heights Days, so we couldn’t be involved much this year,” says Don.  “We’re looking forward to participating next year!”
